Astrid Gutsche, the Latin America’s 50 best restaurants pastry chef of the year

We would like to congratulate to the great Astrid Gutsche who was last night crowned by Latin America’s 50 best restaurants as the best pastry chef of the year. It’s a wonderful recognition for such a great talent and passion and we are looking forward to see new wonderful creations from this talented lady.

This month she is sharing with us her new chocolate dessert which she described:

“It is a cold chocolate melt…
Actually it wasn´t so easy to get that texture in that shell. But we did it. And because the chocolate is cold you will perceive much more the flavour of this native cacao from Quillabamba.  It is close to Cusco and in that region they cultivate the famous Chuncho cacao which is very fruity and with a touch of flowers.

We serve it with a frozen banana sand, sesame croutons, virgin olive oil, a salt from Maras (which is also close to Cusco), black toasted sesame seeds and a simple ripe isla banana puree!
The idea is that you lightly heat up the side of this chocolate cylinder until the first layer melts and the chocolate pops out.”
