Christmas Afternoon Tea by Heather Kaniuk at Mandarin Oriental Hotel Hyde Park

Christmas spirit has arrived also at the prestigious Mandarin Oriental Hotel Hyde Park London. Their talented executive pastry chef Heather Kaniuk has created two afternoon teas with her team. One for children – The Benedict Bear tea – and the another one for all others.

Their main festive afternoon tea is sophisticated creation of comforting flavours of Christmas spices, nuts and candied fruits. It takes inspiration from European Christmas traditions while presenting a more contemporary and luxurious afternoon tea experience. Heather, who comes from beautiful New Zealand, wanted to include some Christmas traditions from across Europe and the world having in mind guests from different parts of the globe, but at the same time showcasing some traditional English flavours as well. “This tea is something you can cozy up with next to the fireplace in the Rosebery!” she told us with sparkles in her eyes.

Beside delicious tea, sandwiches and scones, the Mandarin Oriental Festive Afternoon Tea includes really delicious desserts:

Cranberry, yoghurt and orange Yule Log is a modern take on the Yule log/Christmas buche, with tangy yoghurt mousse, nougatine, and orange-cranberry sponge. This cake has lots of textures and bold flavours.
Gingerbread, pear and caramel gateau is a oft gingerbread cake with candied ginger, pear mousse and spiced caramel cremeux.
Figgy pudding bauble is a modern take on the traditional English Figgy Pudding, this bauble combines a light milk chocolate mousse made from Cacao Barry Ambre Java, with Christmas pudding and spiced figs.
Chestnut, chocolate and vanilla Opera is a Christmas inspired Opera gateau with candied chestnuts and  Cacao Barry Extra Bitter Guayaquil
Mandarin and Spiced Prune Tart is a warming compote of prunes, cinnamon and star anise, with an intense mandarin mousse and golden almonds.
 
Pumpkin and pecan cake is nod to the American tradition of squash to celebrate the festive season, a pumpkin and pecan cake with pumpkin spice creme.
 
Traditional Christmas Stollen is filled with candied citrus, raisins and almonds, and a layer of the highest quality German Lubeca marzipan running through the middle.

Snowball (soft vanilla marshmallow filled with crunchy chocolate biscuit, rolled in coconut)
Christmas Cracker: (wrapped like a cracker and containing a strawberry and cream swiss roll)
Snowman Tart (pear and caramel tart with a white chocolate mousse made from Cacao Barry Zephyr)
