The beans are sourced in Haiti, ‘the pearl of the Caribbean’, country renowned for  its natural beauty and its unique blend of Indian, African and European cultures.  There Cacao Barry is working closely with an ambitious  co-operative of farmers in the area of Grand’Anse. This area offers the best conditions for high quality cocoa as it is one of the most fertile, with abundant trees and regular rainfall.

The 65% cocoa Origine Haïti Chocolate has a mix of 70% Trinitario and 30% Criollo cocoa beans, harvested from variety of trees dating from the XIXth century. It is grown and harvested in respect of good agricultural practices. As a result, it has a very unique and distinctive taste profile and is perfect for all applications, especially tasting tablets and Ganache.
With this wonderful new chocolate is Cacao Barry bringing even more diversity to the Rare Origine range which is already composed by six dark couverture chocolates (Tanzanie, Cuba, Venezuela, Equateur, Saint-Domingue, Mexique), two milk couverture chocolates (Ghana & Papousie) and 2 Origines Selection couverture chocolates (Ambre Java™ & Fleur de Cao™).
